Which iMac should I consider?

sorry if overly general question, i'm looking advice on imac best situation. i've never purchased new imac before, i'm not sure model fill needs without being crazy overkill. system needs serve 2 primary purposes. 1 act media server stream media our various other devices. use plex on our iphones, ipads, , apple tvs, , imac serve plex media server. second function work system wife logo design , hand lettering work. uses ipad pro of initial design , lettering; however, uses adobe illustrator on mac final editing , exporting of work. i'm not familiar enough illustrator know how cpu and/or video card hungry are. base model 21.5" or 27" plenty of power? 8gb of ram enough, or should @ 16gb? main reason i've been leaning towards 27" model because of ability upgrade ram. if 8gb more enough our needs though, i'd willing consider 21.5" version. actual size of screen isn't either wife or myself concerned about. other question had regarding internal drive. feel i've seen nothing hate fusion drives recently. bad? wife notice huge improvement in illustrator if have ssd instead?

again, sorry if seems i'm asking ton of general questions. tried researching on own, i've had hard time finding examples of people our specific needs. figured i'd ask here in hopes may use system. in advance can assist.

 

get 27".
once have it, won't regret having bought bigger display.

8gb of ram enough start.
if need more, add yourself. it's easy. , cheaper way.

biggest consideration:
get ssd inside.
either 256gb (adds $100) or 512gb (adds $300).
1tb ssd isn't worth money.

256gb may "enough", @ least while.
eventually, may want add external usb3 drive (either hdd or ssd needs require).
2.5" form factor drive small , unobtrusive.
folks velcro imac's stand, , out-of-the-way.

aware imac ssd, have "special order it" through "build-to-order" option -- either @ store.apple.com or few selected resellers.

final thought:
if me, i'd spend $200 "midrange" model 7600 cpu (base model has 7500 cpu). little "more" longevity of machine...
