how to restore ipad without updating to newest version


i have 3 year old ipad. having problems. want erase content it's asking passcode. passcode lockscreen plus others use not work. set passcode on 3 years ago , have no idea is.

want restore factory settings , fix every option presented says "the newest version of ipad software installed"

how restore default settings without upgrading? upgrading ios has ruined every single device i've ever owned - want use ipad not render useless , obsolete?

help?
